This week’s newsletter honours one of Tuscany’s greatest specialities, Vin Santo. Intrinsically tied to the region's gastronomy and history, its literal translation is “holy wine”, and while the origin of the term remains a mystery, we like to believe it refers to the miraculous powers it had to revive the sick with its high sugar levels.
The name might ring a bell when paired with biscotti, “Cantucci e Vin Santo” – arguably Tuscany’s most famous dessert. Whilst we agree that this dessert is the best expression of this Tuscan delicacy, there are many other ways that incorporate this sweet nectar into your cooking. This downloadable recipe card includes three local dishes, savoury and sweet, infused with Vin Santo.
On Saturday, May 30th, at 6 pm Italy (5 pm UK / 12 pm EST) our resident chef of luxury staffed villa I Corbezzoli, will run a live cookery demo for you. Join Chef Selene for a hands-on baking masterclass, and prepare Ciambelline al Vin Santo (Italian Vin Santo biscuits). These delicious, crunchy, and not-to-sweet-biscuits, make a great dessert dipped in Vin Santo or any sweet wine. You will need to follow our Instagram to see the live stream.
To yield 30 servings, you will need an oven and the following ingredients:
- 400g ‘00’ flour (or all purpose flour)
- 120g brown sugar
- 50g butter (or margarine)
- 200ml Vin Santo
- 50ml extra-virgin olive oil
- 10g baking powder
